Easy to Make Cheesy Burrito Bake

This delicious Easy to Make Cheesy Burrito Bake is loaded with flavor and topped with lots of melted cheese. Perfect any day of the week, this layered casserole makes plenty and is sure to be an entertaining favorite!

Ingredients:

  • 2 lbs. ground beef
  • 1 small onion (diced)
  • 1 clove garlic (minced)
  • 2 tsp. chili powder
  • 1 tsp. cumin
  • ½ tsp. oregano
  • 1 - 10 oz. can diced tomatoes and green chilies ( I used Rotel Original)
  • 1 - 19 oz. can red enchilada sauce
  • 1 - 30 oz. can or 2 - 15 oz. cans of refried beans 
  • 1 lb. block yellow mild cheddar cheese (grated)
  • sour cream
  • 12 burrito size soft tortillas
  • 13 x 9 casserole dish
  • 13 x 9 baking sheet
  • large skillet
  • microwavable bowl

Directions:

  • In a large skillet over med/high heat cook the ground beef (until no longer pink) along with the onion and garlic. 
  • Remove the skillet from the heat and drain the fat.
  • Return the skillet to the stovetop and over medium heat add the chili powder, cumin, oregano and diced tomatoes and green chilies. Stir until combined well.
  • Remove the skillet from the heat.
  • Preheat the oven to 350 degrees.
  • Use the microwavable bowl and add the refried beans and ¾ cup of the cheddar cheese. 
  • Cover and microwave until the cheese is completely melted. Stir well.
  • To assemble, add just enough of the enchilada sauce to cover the bottom of the casserole dish.
  • First, take 1 burrito and spread a medium spoonful of refried beans.
  • Then, add 2 medium spoonfuls of meat.
  • Fold in the sides and tightly roll up the burrito.
  • Place the burrito in the casserole dish.
  • Repeat the process 11 more times, placing the burritos tightly next to each other (they will all fit, pack them all in, using the entire dish).
  • Spread the remaining refried beans all over the top of the burritos.
  • Sprinkle the remaining meat over the top of the refried beans. 
  • Pour the enchilada sauce evenly over top of the meat.
  • Lastly, sprinkle the shredded cheese evenly over top of the enchilada sauce.
  • Place the casserole dish on top of the baking sheet.
  • Place in the preheated oven and bake for approximately 20 minutes or until the cheese is bubbly and slightly brown around the edges.
  • Serve with sour cream and your favorite side dish.
